Brussels Sprouts with Candied Hazelnuts, Roquefort, and Bacon

Elevate your holiday table or any special gathering with this decadent Brussels sprouts recipe. The combination of tender roasted sprouts, crispy bacon, candied hazelnuts, and creamy Roquefort creates a luxurious dish that’s sure to impress. Serves: 6 to 8

Ingredients

  • 2 lbs. Brussels sprouts
  • ½ cup candied hazelnuts (check out our Candied Gourmet Mixed Nuts recipe), finely chopped
  • 16 oz. package of low-sodium bacon
  • 8 oz. crumbled Roquefort or high-quality blue cheese
  • 2 tablespoons + 1 teaspoon Goldswarm Honey
  • 1 tablespoon garlic powder
  • ¼ cup olive oil
  • Fresh cracked rainbow or black pepper, to taste
  • Sea salt, to taste

Method

  1. Prepare the Bacon
    • Preheat the oven to 400°F (convection).
    • Cook the bacon until medium crisp. Drain excess fat, chop into small pieces, and set aside.
  2. Prepare the Brussels Sprouts
    • Remove excess leaves, trim stems, and halve the Brussels sprouts.
    • Rinse and soak in cold water for 10 minutes. Drain and transfer to a medium mixing bowl.
    • Toss with olive oil and garlic powder until evenly coated.
  3. Roast the Brussels Sprouts
    • Arrange the Brussels sprouts, cut side down, in a single layer in an oven-safe casserole dish.
    • Season with cracked pepper and a light sprinkle of sea salt (be mindful of the saltiness from the bacon and cheese).
    • Bake for 20 minutes, then flip the sprouts cut side up using kitchen tongs. Roast for an additional 20 minutes, or until tender with golden, crispy edges.
  4. Add the Toppings
    • Remove the dish from the oven and layer the roasted sprouts with candied hazelnuts, chopped bacon, and crumbled Roquefort.
    • Drizzle 2 tablespoons of Goldswarm Honey evenly over the mixture.
  5. Finish Baking
    • Return the dish to the oven and bake for 10 minutes, until the cheese is melted and the bacon is crisp.
  6. Serve
    • Drizzle the remaining 1 teaspoon of honey over the finished dish for a touch of sweetness. Serve hot and enjoy!
