Goldswarm Honey Sweet Potato Mash with Candied Pecans

Bring a touch of warmth and indulgence to your holiday table with this luscious sweet potato mash. Infused with the rich sweetness of Goldswarm Honey and a hint of cinnamon, this dish is elevated by the crunch of candied pecans. Perfect as a side dish for any festive meal, it’s as beautiful to serve as it is delicious to eat. 

Serves: 6 to 8 

Ingredients 

  • 6 sweet potatoes
  • ⅓ cup butter, room temperature
  • ¼ cup Goldswarm Honey (reserve 1 teaspoon for garnish)
  • ½ teaspoon cinnamon
  • ½ cup candied pecans (refer to the Candied Gourmet Mixed Nuts recipe), chopped into quarters (add more if desired for extra crunch)
  • Salt, to taste

 Method 

  1. Roast the Sweet Potatoes
    • Preheat the oven to 400°F (convection).
    • Wash the sweet potatoes thoroughly and pat them dry.
    • Wrap each potato individually in foil and place them on a shallow baking sheet.
    • Roast for about 1 hour, or until the sweet potatoes are completely cooked through. Test by piercing with a sharp knife.
  2. Prepare the Mash
    • Remove the sweet potatoes from the oven, unwrap, and carefully peel them while still hot.
    • Transfer the peeled sweet potatoes to a large mixing bowl.
  3. Mash and Flavor
    • Add the butter, Goldswarm Honey (reserving 1 teaspoon for garnish), cinnamon, and salt to the sweet potatoes.
    • Using a potato masher or an electric hand blender, mash until smooth and evenly combined.
  4. Incorporate the Pecans
    • Gently fold in the chopped pecans using a rubber spatula or wooden spoon, reserving a few for garnish.
  5. Serve
    • Transfer the mash to a serving dish and reheat if necessary in the microwave or oven.
    • Garnish with the reserved pecans and a drizzle of Goldswarm Honey. Serve piping hot and enjoy!
