Goldswarm Honey Sweet Potato Mash with Candied Pecans

Ingredients
- 6 sweet potatoes
- ⅓ cup butter, room temperature
- ¼ cup Goldswarm Honey (reserve 1 teaspoon for garnish)
- ½ teaspoon cinnamon
- ½ cup candied pecans (refer to the Candied Gourmet Mixed Nuts recipe), chopped into quarters (add more if desired for extra crunch)
- Salt, to taste
Method
- Roast the Sweet Potatoes
- Preheat the oven to 400°F (convection).
- Wash the sweet potatoes thoroughly and pat them dry.
- Wrap each potato individually in foil and place them on a shallow baking sheet.
- Roast for about 1 hour, or until the sweet potatoes are completely cooked through. Test by piercing with a sharp knife.
- Prepare the Mash
- Remove the sweet potatoes from the oven, unwrap, and carefully peel them while still hot.
- Transfer the peeled sweet potatoes to a large mixing bowl.
- Mash and Flavor
- Add the butter, Goldswarm Honey (reserving 1 teaspoon for garnish), cinnamon, and salt to the sweet potatoes.
- Using a potato masher or an electric hand blender, mash until smooth and evenly combined.
- Incorporate the Pecans
- Gently fold in the chopped pecans using a rubber spatula or wooden spoon, reserving a few for garnish.
- Serve
- Transfer the mash to a serving dish and reheat if necessary in the microwave or oven.
- Garnish with the reserved pecans and a drizzle of Goldswarm Honey. Serve piping hot and enjoy!
