Goldswarm Honey Salmon Dijonnaise – Plain or with Pistachio Crust

Ingredients

  • 2, 8oz pieces of salmon or 4, 4oz pieces of salmon
  • 2 tablespoons French Dijon mustard
  • 2 tablespoons Goldswarm honey
  • 2 tablespoons melted butter (room temperature)
  • 20 roasted pistachio nuts (salted or unsalted), peeled and finely chopped (optional for Pistachio Crust)

 

Method

  1. Preheat convection oven to 400°F (200°C).
  2. In a small bowl, blend the Dijon mustard with Goldswarm honey and set aside.
  3. Using a pastry brush, coat the bottom of a baking dish with one tablespoon of melted butter.
  4. Place the salmon fillets in the baking dish and pour the remaining tablespoon of melted butter over the fillets. Roll the salmon around to ensure all sides are evenly coated.
  5. Brush the Dijon-honey mixture onto the top and sides of each salmon fillet.
  6. Bake in the preheated oven for 15 minutes, or until the salmon is cooked through and has a glossy, caramelized glaze.
  7. Optional: For a crunchy pistachio crust, evenly sprinkle the crushed pistachios over the salmon fillets after baking.
  8. Serve hot and enjoy!
