Goldswarm Honey Salmon Dijonnaise – Plain or with Pistachio Crust

Ingredients
- 2, 8oz pieces of salmon or 4, 4oz pieces of salmon
- 2 tablespoons French Dijon mustard
- 2 tablespoons Goldswarm honey
- 2 tablespoons melted butter (room temperature)
- 20 roasted pistachio nuts (salted or unsalted), peeled and finely chopped (optional for Pistachio Crust)
Method
- Preheat convection oven to 400°F (200°C).
- In a small bowl, blend the Dijon mustard with Goldswarm honey and set aside.
- Using a pastry brush, coat the bottom of a baking dish with one tablespoon of melted butter.
- Place the salmon fillets in the baking dish and pour the remaining tablespoon of melted butter over the fillets. Roll the salmon around to ensure all sides are evenly coated.
- Brush the Dijon-honey mixture onto the top and sides of each salmon fillet.
- Bake in the preheated oven for 15 minutes, or until the salmon is cooked through and has a glossy, caramelized glaze.
- Optional: For a crunchy pistachio crust, evenly sprinkle the crushed pistachios over the salmon fillets after baking.
- Serve hot and enjoy!
