Signature Goldswarm Crème Caramel

This Crème Caramel was designed specifically to showcase the rich, complex flavor profile and velvety texture of Goldswarm Honey. By using honey in place of traditional sugar for the caramel, this dessert takes on a unique depth and natural sweetness that highlights the best qualities of Goldswarm's premium honey. The result is a smooth and creamy custard with a beautifully glossy caramel top, perfect for a refined finish to any meal.

Serves 4 - 6

Ingredients

Custard

  • 500 ml half and half
  • 1/3 cup sugar
  • 4 Eggs
  • 1 teaspoon vanilla essence

Caramel

  • 1/2 cup Goldswarm honey

Method                                                                           

  • Pre heat convection oven to 400ºF (200ºC)
  • In a saucepan, bring the half and half to a low boil, and then let it cool to room temperature.
  • In a mixing bowl, thoroughly whisk the eggs and sugar together until the sugar is fully integrated.
  • In a deep, oven-safe circular custard mold or dish, swirl in the Goldswarm Honey, spreading it evenly to coat the entire base of the dish. Set aside.
  • Pour the cooled half-and-half into the egg and sugar mixture through a strainer to ensure a smooth custard. Blend well to achieve a uniform consistency.
  • Stir in the vanilla extract.
  • Pour the custard mixture into the honey-coated dish.
  • Boil water and pour it into a bain-marie (water bath) pot halfway up the side of the dish. Place the custard dish into the water bath, then lower the oven temperature to 350°F (175°C).
  • Bake for 20 to 25 minutes or until the custard is firm. Test by inserting a knife into the center of the custard; if it comes out clean, the custard is ready.
  • Let the Crème Caramel cool to room temperature, then refrigerate for at least 2 hours or overnight before serving.
  • To serve, run a knife around the edges of the custard to loosen it from the dish. Place a serving plate on top of the dish, then flip the dish over to release the custard. The glossy caramel will naturally flow over the sides, creating a beautiful presentation.
  • Serve plain or garnish with fresh fruit or berries for an added touch.
